Low Carb BLT Chicken Salad


  •   1.5-2 cups cooked chicken (chicken breast, rotisserie chicken, canned chicken)

  •   4 strips cooked, crumbled bacon (can use turkey bacon)

  • 1/2 cup chopped lettuce (spring mix works well)

  • 1/2 cup grape tomatoes (halved or quartered)

  • 1/4 cup NF Greek yogurt

  • 1/4 cup mayo

  • 1 tsp parsley

  • 1/2 tsp onion powder

  •   1/2 tsp garlic powder


  1.    Combine mayo, yogurt and seasonings together in a medium bowl.

  2.    Stir in the chicken, bacon and grape tomatoes.

  3.    Refrigerate for one hour or more.

  4.    Add in your chopped lettuce right before serving.

Serve on additional lettuce wraps, mini croissants or crackers.
