Keto Potato Skins


One of my FAVES!


INGREDIENTS:

  • 2 bags of riced cauliflower

  • 1 egg

  • 1/4 cup melted butter

  • 1/2 cup grated parmesan cheese

  • Pink salt

  • Pepper

  • Chedder cheese

  • Bacon bits



Instructions:

  1. Cook, drain and pat dry cauliflower rice

  2. Add to a medium size bowl

  3. Mix in 1 egg and 1/2 cup of grated parmesan cheese and melted butter

  4. Bake at 350 x 25 mins-35 mins

  5. Add cheese and bacon bits

  6. Bake x 5 more mins

  7. Let sit and cool, add sour cream for additional healthy fats and ENJOY!
