Keto/Low Carb Taco Pie

Ingredients:

2 pounds of ground beef

1 can of rotel

1/4 cup diced up onion

1 teaspoon chili powder

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon cumin

1/2 cup shredded cheddar cheese

Keto corn bread (I used the high key mix but you could use any recipe in here)


Instructions:

Start by cooking your ground beef and add in seasonings and diced onion. 

Once browned then add a can of rotel. If you’re more low carb you can add in about a half can of corn as well for extra goodness.

Pour half of corn bread mix in 8x8 casserole dish

Then add in ground beef mixture with rotel

Add cheese 1/4 cup of cheese in (I use a lot of cheese cause I love cheese. Feel free to use less!

Pour rest of cornbread mix on top and top with rest of shredded cheddar

Cook in oven on 350 for about 20-30 minutes until corn bread is light brown
