Banana Pudding Chaffles


Pudding Ingredients:

• 1 large egg yolk

• 1/2 cup heavy whipping cream

• 2 tbsp powdered sweetener

• 1/4 – 1/2 tsp xanthan gum

• 1/2 tsp banana extract


Banana Chaffle Ingredients:

• 1 oz cream cheese, softened

• 1/4 cup mozzarella cheese, shredded

• 1 egg, beaten

• 1 tsp banana extract

• 1 tbsp sweetener

• 1 tsp baking powder

• 2 tbsp almond flour


Instructions:

* Combine the heavy cream, powdered sweetener and egg yolk in a small saucepan.

* Whisk constantly until the sweetener dissolves and mixture thickens.

* Simmer 1 minute.

* Add the xanthan gum and whisk.

* Remove from heat and add a pinch of salt and the banana extract and stir well.

* Transfer to a glass dish and cover surface of the pudding with plastic wrap.

* Refrigerate.

* Mix all ingredients together for chaffle

* Cook in preheated mini waffle maker.

Put pudding mix in between chaffles ans enjoy!
